Origins of the Cashew Chicken

I found a post at The Fortune Cookie Chronicles Blog that the New York Times had an expose about the origins of 'Springfield'-style Cashew Chicken. It's a great piece, and still proves Jennifer 8 Lee's take on Chinese food as we know it is very American.
